Warda chorba frik is a finely cracked barley, 100% natural, sold in a 250 g bag labelled 'Soupe d'orge' (barley soup). It is produced in Sousse, Tunisia, by the Rose Blanche group. Unlike traditional Algerian frik, which is roasted green wheat, the Warda version is barley-based: it is the base of tchicha, the Tunisian barley soup, and is cooked exactly like a chorba.
For the consumer, this is the soup that opens the evening meal during Ramadan and warms winter dinners: the grain cooks in a broth of tomato, onion, meat or chicken with coriander and spices, giving a thick, filling soup. Cracked barley can also be steamed like couscous.
Why list it
- Highly sought after before and during Ramadan, when chorba is served every evening.
- Economical 250 g format, suited to trial purchases and small households.
- Single ingredient, no additives, no added salt.
- 24 bags per case, compact enough for neighbourhood grocers.
How to use it
Rinse the cracked barley, pour it into simmering broth and cook for about thirty minutes, stirring, until the soup thickens. Serve with a squeeze of lemon. On the shelf, place Warda chorba frik with the brand's soup pastas, tomato paste, harissa and spices, and plan a dedicated display a month before Ramadan.
